Soba Making Lesson
We took a Soba (Buckwheat noodle) making lesson in Yasaka Furusato Taikenmura.
We made Nihachi Soba (二八蕎麦), by using 400g of Soba ko (soba powder), and 100g of flour. Nihachi soba got its name because 20% of the mixture is made of flour, and other 80% is made of soba powder. So Ni comes from 2 in the 20% and Hachi comes from 8 in the 80%. We also need 260g of water, which is 52% of the powder mixture.
Soba making process can be separated into 3 parts. The first step is mixing ingredients and forming the dough.
The second step is where we roll the dough into a thin sheet, about 1.5cm thick.
Finally we cut the dough into long thin strips using a special knife and board.
After you finish the lesson, you can eat your fresh soba at the restaurant, or you can take it home and enjoy it later.
